Date & Tamarind Chutney



                Date and tamarind chutney or sweet chutney or khajur imli ki chutney is an essential chutney if you are thinking of trying any Indian chaat recipe, let it be dahi puri, bhel puri, sev puri, samosa ragada or cutlet this chutney is needed in all of them except pani puri and my favorite Pav Bhaji.





                       The sweet chutney can also be served as an accompaniment to various pakodas or bhajiyas try serving it with Palak ke kofte, Matar kachori, Aloo bonda, Masala Vada and Rava vada from My Mom's Kitchen.

                       The sweet element in this chutney comes from the jaggery that is cooked with dates and tamarind and then blended to give chutney of a desired consistency. It is easy to make and keeps well when kept refrigerated in an air tight box for months together. You will need two main equipments to make the chutney namely the pressure cooker and a blender so let's head for today's recipe :-

Ingredients:

  1. Dates - 1 cup
  2. Jaggery - 1/2 cup
  3. Tamarind - 1/4 cup
  4. Chili powder - 1 tsp
  5. Coriander powder - 2 tsp
  6. Cumin powder - 1/2 tsp
  7. Salt - to taste
  8. Water - 1&1/2 cups + 1/2 cup

Method:

  • In a pressure cooker take the deseeded dates, jaggery and tamarind along with 1 & 1/2 cups of water and pressure cook for three whistles or till the dates have turned soft.
  • Remove the above mixture from the cooker after the steam has completely subsided. Let it cool for a while.
  • Now, blend the above mixture using a blender adding another half cup of water.
  • Using a strainer strain the chutney into a bowl.
  •  Add all the spices and mix well. The chutney is ready.
  • Serve with your favorite fritters or use as required in chaat recipes or store in an air tight box in freezer till ready to use.

Til Ki Chutney




                              Til or Sesame seeds are loaded with Calcium. They are tiny but very beneficial. They are an excellent source of iron, magnesium, phosphorous, manganese, copper, zinc, fiber, thiamine, vitamin B6, folate, protein, and tryptophan. They help prevent diabetes, reduce blood pressure and also lower cholesterol besides relieving pain from arthritis.

                               Til ki Chutney can be served with Idly, Dosa, Puri, Chapathi, or Rice, but My Mom loves to serve it with Palak Paratha



                                            
                         The goodness of the recipe is not only from the highly nutritional sesame seeds but also the equally beneficial garlic.
            

Ingredients:

  1. Sesame seeds (or) Til (white) - 2cups
  2. Garlic cloves - 8 to 10 nos
  3. Tamarind - 10 to 15 gms (you can increase or decrease the amount as per your liking my mom says roughly it has to be about a fist)
  4. Green chilies - 5 to 6 nos
  5. Coriander leaves - 1/2 bunch
  6. Mint leaves - 1/2 bunch
  7. Salt - To Taste

Method:

  • Soak Tamarind in some water to extract the juice.
  •  Dry roast the Sesame seeds and grind them to a  powder.Keep aside.
  • Next, grind all the other ingredients together.
  • Mix the two prepared pastes well and serve.
                                                         

Note: You can add sliced onion as a topping while serving.

Dahi ki chutney (Raita)




                    Raita is better known as Dahi ki Chutney among us. This dahi ki chutney is a must in any function or wedding whether small or big and among rich or poor. It is one of those which cannot be striked out of the list and owing to it's simplicity I wish it should never be left out.

                     It is a simple yogurt based dish that goes on well with any biryani or pulav. Try it with Chana vegetable biryani or Fitni pulao or Boot pulao.



                        
                 Making this dahi ki chutney is as easy as counting one, two, three...it requires very few ingredients and gets done in very very less time. Ingredients:

  1. Yogurt - 200gm
  2. Onion - 1 no (small)
  3. Coriander leaves - few
  4. Mint leaves - few
  5. Salt - to taste

Method:

  • In a bowl beat yogurt well and if you find it too thick add little water to get the desired consistency.
  • Add salt, chopped onion, mint and coriander leaves.
  • Mix well and serve.

Kairi ki Chutney (Raw Mango Chutney)



                   My today's post is something more appetizing than yesterday's Liver Fry. We all enjoy Raw Mango or Kairi as we call it in Hindi during the summer season. Whether it be simply sprinkled with red chili powder and salt or be it in a pickle form or in any other dish. And apart from the amazing taste and happiness that it gives it is also a very healthy pick. It contains high amount of Vit C that helps in formation of new blood cells and also aids in the iron absorption in the body.

                This recipe "Kairi ki Chutney" that I am sharing with you today, is a very simple and tempting Chutney recipe that can be enjoyed as a side dish to your dosa, rice, bread or even roti. 

                  It is a simple combination of  "kairi" (raw mango) and khopra (dry coconut) with green chilies which is then given a tadka to light up your taste buds.



          This Chutney has always been one of my favorites and I am sure it will also become your favorite too. It is surely very easy to make but the taste, the taste is too hard to forget.

Ingredients:

  1. Kairi (Raw Mango) - 1
  2.  Dry coconut - 1/2 piece
  3. Green Chilies - 5 to 6 nos
  4. Salt - To Taste

For Tadka:

  1. Jeera (Cumin seeds) - 1/2 tsp
  2. Mustard seeds - 1/2 tsp
  3. Curry Leaves - 1 or 2 sprigs
  4. Oil - 3 tbsp

Method:

  • Wash the raw mango or kairi and cut in in small bite size pieces and discard the stone.
  •  Cut the dry coconut also in small pieces.
  •  In a grinder add kairi green chilies and salt and grind to a paste. Remove in a bowl and keep aside.
  • Now grind the coconut in the grinder to a fine paste. Remove and add it to the bowl containing the kairi paste and mix well.

Tadka:

  • Heat oil in a  kadai. 
  • When the oil is hot add the cumin seeds, mustard seeds and the washed curry leaves.
  • Switch off the flame. 
  • Add the prepared tadka to the kairi and coconut  paste from above.
  • Serve.


     It can be stored in refrigerator and it lasts well for around two days in Summer season.
