Sabudaana kheer



                 Kheer is a famous dessert of India with infinite variations. The main component being milk which is paired with another ingredient to get the desired kheer. Bottle gourd kheer, rice kheer and Sabudana kheer are some of my favorites.




                Sabudana is the Hindi name for Sago. These white little pearls are rich in carbohydrates and act as a fuel for the body. We consume sago water mostly when we are sick or have an upset stomach. If you are skinny and wish to gain weight in a healthy way then Sago is the best option.

                Today's Sabudana kheer is a delight for sweet lovers. It is easy to put together the only time consuming step being the soaking of sabudana or sago pearls. Sabudana kheer is mostly served with pooris, the pooris in this case being similar to gujiyas that are made during the festival of Holi. Here comes the detailed recipe :-

Ingredients:

  1.  Sabudana - 1 cup
  2. Milk -2 1/2 cups
  3. Sugar - 3/4 cup
  4. Cardamom powder - 1 tsp
  5. Cashews - few
  6. Almonds - few
  7. Ghee - 2 tbsp

Method:

  • Wash and soak the sabudana in water for approximately 30 minutes in a cooking vessel.
  • Place the vessel on stove (containing both sabudana and water used for soaking) and let the sabudana cook through. May take around 10 to 15 minutes. 
  • Now add the sugar. You may adjust the sugar level to your liking.
  • Once the sugar has dissolved add the cardamom powder. Mix well. Turn out the flame.
  • Soak or boil cashews and almonds and cut them very finely.
  • In a pan heat ghee and add cashews and almonds and fry till browned. Remove to a plate. (If you wish you can skip this step and add the nuts directly while serving). Add the remaining ghee to the sabudana mixture.
  • Heat milk and add it to the prepared sabudana mixture. 
  • Garnish with fried cashews and almonds.
  • Serve immediately or chilled.

    Sooji ka Halwa



                           Sooji also known as Rava and Semolina in English is widely used to make breakfast dish called Upma but, another famous dish that can be made using it is a dessert called the Sooji ka meetha or Sooji ka halwa.



                          Sooji or semolina is high in protein, rich in B vitamins like folate and thiamine and also has large amounts of Selenium, that works as an anti-oxidant and helps in strengthening the immune system.

                           Sooji ka halwa is quick to prepare and very easy to make. The most crucial step in the recipe is the browning or roasting the sooji which involves continuous stirring. Dry fruits are added to give an additional taste, cashews, almonds and raisins are the ones that are generally used although I have skipped adding raisins for personal taste. Here, comes the detailed recipe :-

    Ingredients:

    1. Sooji/Rava/Semolina - 1 cup
    2. Water - 1 cup
    3. Sugar - 3/4th cup
    4. Cashews - few
    5. Almonds - few
    6. Ghee - 1 tsp (clarified butter)

    Method:

    • Soak almonds and cashews in water for 20 to 30 mins or boil them if you are running short of time. Sliver almonds and cashews very finely.
    • Heat ghee in a pan. (You can alternatively use oil)
    • Add the dry fruits,  fry till light brown in colour and remove to a plate.
    • To the same pan with the remaining ghee add sooji.
    • Stir continuously and roast the sooji till it starts changing colour and you smell a nice aroma. (Darkening the sooji at this step gives a darker shade to the halwa).
    • Add water. The sooji begins to thicken. 
    • Add sugar. First add only half a cup of sugar and increase the amount as per your liking. Mix well.
    • Now add the fried dry fruits preserving some for garnishing. Mix well to combine. Turn off the heat.
    • Garnish and serve warm.

    Chocolate vanilla marble cake




                            Chocolate and vanilla are two basic flavors that are loved by all and found widely. And there are times when we land in a quagmire when we are asked to select one out of the two and for those moments comes as a saviour, this delicious chocolate vanilla marble cake.



                      This cake like my previous posts of other cakes is very simple and easy to make. An ideal one for the beginners and also again egg-less! Combining both the worlds of chocolate and vanilla this cake is beautiful, delicious and moist and will be a great accompaniment to your evening tea. The most enjoyable part in making of this cake is making the patterns by simply swirling the chocolate batter mixed in the vanilla batter using a fork to give the desired marble effect.

    Ingredients:

    1. All purpose flour - 1 cup
    2. Butter - 70 gms
    3. Condensed milk - 200 ml
    4. Milk - 1/2 cup
    5. Cocoa powder - 1 & 1/2 tbsp
    6. Vanilla essence - 1 tsp
    7. Baking powder - 1/2 tsp
    8. Baking soda - 1/2 tsp

    Method:

    • In a mixing bowl beat together butter and condensed milk.
    • Add milk and vanilla essence. Mix well.
    • Starting with flour, sieve and add all the dry ingredients one by one to this except cocoa powder. Mix well till the batter looks well incorporated.
    • Pour 3/4th of this prepared vanilla batter into a greased cake tin.
    • To the remaining batter in the bowl add cocoa powder and mix well. 
    • Add this prepared chocolate batter also to the tin.
    • With the help of a fork swirl the cocoa batter into the vanilla to create mosaic patterns for the marble effect.
                                                             
    • Bake this in a pre-heated oven at 180C for 25 minutes. Remember, every oven has different settings so keep a check after 20 minutes. Insert a toothpick to check doneness, if it comes out clean the cake is ready. 
    • Remove from oven and place it on wire rack to cool down.



    • Transfer to a plate. Slice and serve.

    Oats Halwa



                     Supposing, you have planned to stay on a diet or eat only healthy foods and stacked up your cupboards with oats only and a sudden craving hits for something sweet and then what do you do? Well, prepare Oats Halwa and that you can do otherwise too 😀


              On a serious note, Oats Halwa is an under 15 minute recipe. It is delicious while also bringing you all the health benefits of Oats and an interesting way to consume them specially if you are bored with the regular ways. It is an absolute fuss free recipe and one of those which you can make in a jiffy while also attending your guests at the same time, so next time when somebody visits you, do give this one a try.  You may also like to try Vegetable Oats Kofta from My Mom's Kitchen.Now, onto today's recipe :-

    Ingredients:

    1. Oats - 1/2 cup
    2. Milk - 1/2 cup
    3. Sugar - 1/2 cup 
    4. Cashew nuts - few
    5. Cardamom powder - 1/2 tsp
    6. Water - 1 cup
    7. Ghee/Oil - 2 tbsp

    Method:

    • Heat Oil in a vessel.
    • On medium to low flame add oats. 
    • After a minute or two add water. Mix well.
    • When the mixture comes to a boil add milk and cardamom powder.
    • Keep stirring and when the mixture thickens add sugar. Mix well to combine. Turn off the heat.
    • Garnish with cashew nuts and serve warm.

    Chocolate pudding




                    Attention chocolate lovers! presenting a chocolate pudding so rich, moist and chocolaty that it will make you fall in love with chocolate all over again.



                       With four main ingredients and under 15 minutes you will have the chocolaty world to relish. Fifteen minutes, oh yeah, but you will have to patiently resist for a few hours till the pudding sets in the refrigerator for a few hours, although you can serve it warm if you wish to but chilled is highly recommended. Lastly, you can give it your own personal touch for garnishing I used some dry fruits and Ferrero rocher chocolates my cousin had gifted me you can use anything you like such as chocolate shavings, chocolate wafers or kit-kat bars.

    Ingredients:

    1. Cocoa powder - 3 tbsp
    2. Corn flour - 3 tbsp
    3. Milk - 2 cups + 1/4th cup
    4. Sugar - 10 tsp
    5. Vanilla essence - 1tsp (optional)
    6. Nuts - to garnish

    Method:

    • In a mixing bowl whisk together cocoa powder, corn flour and 1/4th cup milk. Keep aside.
    • In a vessel heat milk.
    • When milk has turned warm add sugar. Adjust the sugar levels to your liking.
    • After the sugar has dissolved completely, reduce the flame and add the prepared cocoa powder mixture.
    • Stir continuously till the mixture thickens and coats the spoon.
    • When it has reached medium - thick consistency turn out the flame and add vanilla essence.
    • Whisk it once and transfer to serving bowls. The bottom part is comparatively more thicker than the rest of the pudding.
    • Cover the bowls with foil and refrigerate for about 3 to 4 hours or more.
    • Garnish just before serving and enjoy.

    Mango sponge cake



                     The season of Mangoes is in full swing and I'm yet to post my 1st recipe using the King of fruits on my blog. So, here it is Mango sponge cake. A simple light and fluffy cake that's an absolute bliss.



                        This recipe for Mango sponge cake is egg less. It is rich in Mango flavour, super creamy with a lovely texture baked to win everybody's heart. This cake is an ideal one for the beginners to try as it is an absolute fuss free cake and you must try it especially when you have got bored baking the regular vanilla and chocolate sponge cakes.

                         I have left my cake plain just like that after baking as I wanted the Mango flavour to highlight in my every bite however, you might like to add whipped cream or chocolate frosting and also garnish with sprinkles or some more chopped mangoes it's all up to you. For me this simple plain cake gets a 100 on 100. So, here's the detailed recipe :-

    Ingredients:

    1. Maida / Plain flour - 2 cups
    2. Powdered sugar - 1 cup
    3. Mango pulp - 1 cup
    4. Baking powder - 1 tsp
    5. Baking soda - 1/2 tsp
    6. Milk - 1 cup
    7. Oil - 3 tbsp 

    Method:

    • Sieve together the dry ingredients in a bowl i.e. flour, sugar, baking powder and baking soda.
    • In another mixing bowl take mango pulp and add oil to this. Mix well.
    • Add the dry ingredients to the wet in batches to get a lump free mixture. (My mangoes were sweet enough you may have to adjust the sugar amount to get the desired sweetness. Also you can add essence to the cake)
    • Add milk slowly in batches to get a smooth lump free batter.
    • Transfer the batter to a greased baking tin.
    • Bake at 160 C for 30 minutes in a pre heated oven or till a tooth pick inserted comes out clean. (Keep a check on the cake as each oven settings varies).
    • Remove from oven and let it cool on wire rack for some time.
    • Cut into pieces and serve.

    Beetroot Halwa (Chokandar ka meetha)



                            Today, I am going to end my series of kids vacation special recipes. This is my 10th post in the series and Ramadan is soon approaching so I thought it to call off and for the grand finale I have decided to share the recipe for Beetroot halwa or Chokandar ka meetha.
           
                        


                      Beets are rich in fibre, provide nutrients like Vit C, and minerals such as potassium, calcium, iron among many others. They are low in calories and an excellent choice for weight loss program, this halwa excluded, but it's good to indulge in so once in a while and if you and your kids have a sweet tooth then this is just the right recipe for you. 

                      I never tasted or touched (still didn't touch) Beetroot until Mom made this halwa on Eid a few years back probably 2013 or 14, years pass by so quickly :/ and that year I had a cousin sister visiting us, she could not keep away from the star dish that evening and we had to move away the container from her for the fear of over consumption!

                    The recipe for making Beetroot halwa is somewhat similar to Gajar ka halwa. The old saying "No pain, no gain" perfectly suits this dish for you have to grate the beetroots (you may use food processor) and stir a lot while frying them in ghee or clarified butter. Detailed recipe below :-

    Ingredients:

    1. Beetroot - 1/2 kg 
    2. Sugar - 2 cups or more
    3. Ghee - 2 to 3 tbsp
    4. Almonds - 8 to 10 nos

    Method:

    • Peel the beetroots and wash them well. Grate and keep aside.
    • Boil the almonds or soak in water for about half an hour. Peel and sliver, keep aside for garnishing. You can also fry them and then use.
    • In a heavy bottomed vessel heat ghee.
    • Lower the flame, add the grated beetroot. Keep stirring frequently in between and cook till it looks dried up. This may take anywhere between 20 to 30 minutes and this is the most important step in the recipe.
    • Add sugar and adjust it to as per your liking. Stir well. 
    • After the sugar dissolves completely switch off the flame. (may take around 5 minutes)
    • Garnish with slivered almonds and serve warm.

    Eggless Chocolate cake



                               Kids love chocolate flavor there is no denying of the fact and so today in kids vacation special recipes is Eggless chocolate cake. Okay, we were speaking of healthy recipes all the while but once in a while indulgence is fine and we are also celebrating something special. The kids exam results are out this week and they have passed with flying colors so a treat of this delicious chocolate cake is all worth for their hard work and toil. And moms, you don't worry of any hard work for this cake is super easy to make and bake! ☺



                       Also, I'm submitting this post for a "Recipe of love" contest on a facebook group.While I'm dedicating it to my friend there (who's got a reason to celebrate) here its solely for the kids. First I'd thought for a vanilla chocolate cake but when there is chocolate what does vanilla has to do anyway? This cake is super moist super delicious and egg less. So, let's head onto the recipe :-

     Ingredients:

    1. All purpose flour (Maida) - 1 1/2 cups
    2. Sugar - 3/4th cup
    3. Salt - 1/2 tsp
    4. Baking soda - 1 tsp
    5. Cocoa powder - 1/4th cup
    6. Vanilla essence - 1 tsp
    7. Oil - 1/3rd cup
    8. Vinegar - 1 tbsp
    9. Water - 1cup 

    Method:

    • In a large bowl take all the dry ingredients together (ingredient no 1 to 5) mix well to combine. Create a well in the center.
    • Slowly add the wet ingredients (no 6 to 9) in the center. Mix to combine. After adding water the batter starts taking its shape. Don't over mix.
    • Add the prepared batter to a greased baking tin and place in a preheated oven at 180 C for 25 minutes.(Every oven has different settings so keep an eye over your cake after 18 to 20 minutes have passed by)
    • Check if the cake is done using a skewer or a tooth pick. 
    • Remove from the oven and let it cool for a few minutes before removing to a plate.

    • Serve warm.

    Vermicelli kheer



                As am nearing the milestone of reaching my 100th post on blog this being the 97th, the excitement is all over the place suddenly every little detail matters and every dish is worth publishing no matter how many thousands of times people before me might have shared it and amidst all this work with a biggg drafts list pending and begging for attention I'm here with my latest offering Vermicelli kheer.



                        Vermicelli kheer has two main ingredients one being vermicelli itself and second milk the most essential ingredient to make a kheer. Vermicelli kheer very easy to put together, requires very less cooking time and tastes heavenly. You can serve this amazing kheer as a bonus to your regular dinner or to your guests or make it on special occasions and festivals.

                         I used Bambino vermicelli to make this kheer Bambino being my favorite brand and I get them exclusively from Numaish along with pastas, spaghetti, macaroni and son papdi packets. I love doing free publicity for them 'coz I simply love the brand and like I often say in my posts "spread the joy of taste".     Ingredients:

    1. Vermicelli - 1/4 cup
    2. Milk - 2 & 1/2 cups
    3. Sugar - 1/4 cup
    4. Cardamom powder - a pinch
    5. Pistachios - few

    Method:

    • Heat milk in a deep bottomed vessel and add vermicelli to it.
    • Add sugar and give a good mix. Adjust the sugar level to your taste.
    • When the vermicelli looks cooked add a pinch of cardamom powder and switch off the flame.
    • Garnish with grounded pistachios and serve warm or chilled.

    Carrot milkshake



                     Another carrot recipe today and this time in the form of a healthy & yummy milkshake. It is thick and creamy and the rich flavor of cardamoms will make you want for more. And there is absolutely no cooking involved. Just blend all the ingredients together and this milkshake is ready!


         
                      You may also like to try my earlier recipes using carrots like the Sweet n sour carrot salad, or tummy filling Carrot capsicum rice, or mouth watering Gajar ka halwa, or include them in a healthy and unique recipe of Vegetable oats kofta   or pair it with other veggies for a lip smacking side dish of Vegetable khorma.  


                      Besides carrot that are rich in carotenoids this recipe also has almonds, another healthy ingredient which is rich in Vitamin E, healthy fats, protein and magnesium. Here comes the recipe in detail :-

    Ingredients:

    1. Carrot - 1 large
    2. Almonds - 10 to 15 nos
    3. Sugar - 2 tbsp
    4. Milk - 2 cups
    5. Cardamom powder - a pinch

    Method:

    • Soak almonds in water for a couple of hours. Peel and keep aside.
    • Take all the ingredients in a blender jar and blend till smooth. Adjust the sugar levels to your liking. 
    • Chill & Serve.

    Strawberry milkshake



                   All through the winter I've been only talking of peas and peas and peas but there are so many other produces of this season that are as enthralling as peas and one such thing is Strawberry, the queen of fruits.

                Every time I think of strawberries the first thing that comes to my mind is the jingle straw-ba-ba-berry shortcake of the cartoon strawberry shortcake ( I badly miss those epic days of childhood). Also, on my trip to Mahabaleshwar a few years back, I remember seeing tons & tons of freshly harvested strawberries packed & being sold with other berries and carrots all around the place & clearly strawberries are the most popular berries. Strawberries are also quite beneficial for they are packed with rich nutrients like flavonoids, antioxidants, Vitamin C, potassium, magnesium and other minerals.

                Today, the background is strawberries, the foreground is strawberries in short it is a very-berry-merry day!               

                                                     
             

               Strawberry milkshake is an easy to put together drink with readily available ingredients and is also quite refreshing. I've omitted using ice cream in this milkshake but you can add a scoop to add up the creaminess of the shake.

    Ingredients:

    1. Strawberries - 1/2 cup (6 to 8 nos)
    2. Milk - 3/4 cup
    3. Sugar - 2 tbsp
    4. Ice cubes - 2

    Method:

    • Remove stems of the strawberries.
    • Take all the ingredients in a blender jar and blend till smooth.
    • Pour into serving glasses and serve chilled.

    Fruit Custard




                     Fruit custard a thick creamy dessert filled with plenty of fruits. It's one of my favorite desserts and  a very common one and also very easy to make. It is also an interesting way to make kids consume fruits.



                       Fruit custard is a common dessert at our parties lately they have been modified being added with a layer of sponge cake and a topping of vanilla ice cream but original will always be original - the BEST!



                         You can add any desired fruits of your choice however, my favorite among the lots is Banana the rest of the fruits that are usually added are the common fruits apples, grapes, pomegranate, sweet lime and oranges. Do check out Orange kheer from My Mom's Kitchen. Once I even had a chance of having pears in the fruit custard so you can add any fruit you wish to have.

    Ingredients:

    1. Milk - 3 cups
    2. Apple - 1 no
    3. Bananas - 2 nos
    4. Sweet lime - 1 no
    5. Orange - 1no
    6. Grapes - few
    7. Pomegranate - 1/2
    8. Sugar - 6 tbsp
    9. Custard powder - 3 tbsp
    10. Pineapple essence - 1 tsp
                              {I did not have pineapple at hand so instead added a tsp of pineapple essence you can skip it or instead add vanilla essence and that too is completely optional. Also if you wish you can add pistachios and cashews too}

    Method:

    • To a heavy bottomed vessel add milk and heat it on low flame.
    • From it take 1/4 cup of milk and to this add custard powder. I used vanilla flavored custard powder. Stir well so that no lumps are formed.
    • Add this custard mix to the boiling milk and mix well.
    • Add sugar and essence that you are using and stir to avoid lumps formation and cook till the mixture thickens.
    • Switch off the flame and let the mixture cool completely. The mixture will thicken further as it cools down so do not cook till too thick.
    • Add chopped fruits to the cooled mixture and mix till well combined.
    • Refrigerate and serve chilled.

    Orange kheer



                      Not Just Oranges...! It was a short story that I studied probably in my high school days. Though now I only have a faint idea of the story and absolutely forgot the author's name but the title, the title got stuck in my head ever since and every time I come across an orange that is what goes through my mind "Not Just Oranges!" And today I find it apt as it is not just oranges but orange kheer.

                        Orange kheer is an uber-delicious dessert that can be made in just few minutes neither does it require many ingredients.

                             


                       Oranges are an excellent source of Vitamin C and are full of dietary fiber. They are rich in carotenoid compounds that are converted to Vitamin A  and help in good eye health and protect vision.

                       My dad likes eating mangoes chopped and drenched in milk though I haven't tasted it replacing mangoes with oranges seemed a fine idea. Now going by the size of oranges that I had as you can see in the pic above only 1 orange sufficed me but depending on the size of the oranges that you possess increase the amount.

    Ingredients:

    1. Oranges - 2 to 3 medium
    2. Milk - 250 ml
    3. Sugar - 4 tbsp
    4. Cardamom powder - 1/2 tsp
    5. Cashew nuts - 10 to 12 nos
    6. Vanilla essence - 1 tsp (optional)

    Method:

    • Peel the oranges, deseed and chop into small pieces.
    • Heat milk in a vessel.
    • Add sugar (increase or decrease the amount by your preference) followed by cardamom powder.
    • Add roughly chopped cashew nuts and bring to a boil.
    • Remove from flame and allow it to cool.
    • Add chopped oranges.
    • Serve chilled.


      Serve this tasty n delicious Orange kheer on festivals or to your guests or simply to satisfy your sweet tooth.

    Gajar ka Halwa



                                 Happy Republic day to all Indians! Today I have brought up a nation wide loved sweet dish Gajar ka Halwa that needs no introduction. This rich dessert is made on special occasions and it wouldn't be wrong if I say that it becomes a special occasion when Gajar ka halwa is made at home.

                                 Few weeks ago in my local supermarket I simply picked up a tin of condensed milk not sure what to use it in...there were too many things going on in my head and I was actually out for a fancy shopping that means picking up anything that fancies my eyes. The tin remained unused unopened for a couple of weeks and one fine evening Dad brought up a kilo of carrots and there I and my condensed milk tin had a purpose in life. The next morning tasty Gajar ka Halwa was ready to be digged into!
                              
                                Grated carrots cooked in milk and garnished with rich nuts make an exemplary treat anytime of the day.


           The carrots used in the preparation of halwa are the red or pink variety carrots that are much thin and slender than the common orange carrots. 

    Ingredients:

    1. Carrots - 1 kg
    2. Milk - 5 cups
    3. Condensed milk - 1 tin
    4. Sugar - 12 tbsp
    5. Ghee - 2 tbsp
    6. Nuts - to garnish
    7. Raisins - to garnish (optional)

     Method:

    • Grate the carrots.
    • Soak cashews and almonds in water for half an hour or boil them if you are short of time. Peel the almonds and sliver.
    • Take milk in a pan add grated carrots to it and bring to a boil.
    • Lower the flame and cook stirring occasionally till milk dries up.
    • Add condensed milk I have used Nestle milk maid 400gm tin.
    • Add sugar and cook on low flame till dry. It took me about 25mins.
    • Add ghee and cook for another 10 mins.
    • Remove from flame. Garnish with nuts and raisins of your choice and serve hot.

    Bread Rasmalai


     Rasmalai is a very famous sweet in India. Made from curd cheese and malai it is a very rich dessert and a favorite of all. Bread rasmalai is the easy version of it which does not even require the two ingredients mentioned above. It is also time saving and the final product is no less to the original one so much so that my dad had to be told that it is "bread" and not the actual "rasmalai."



    At my place we are not a fan of sweets, we don't like dense sweets (calorie issue, no, not that) so I did not add any cream or condensed milk or any other diary product to the recipe. Apart from the milk required it only has the regular granulated sugar and that too in a small amount but you can adjust it to your taste.

    Ingredients:

    1. Bread slices - 5 to 6 nos
    2. Milk - 3cups
    3. Sugar - 8 tsp
    4. Saffron - 6 to 7 strands
    5. Cardamom powder - 1/4 tsp
    6. Pistachios - to garnish

    Method:

    • Boil milk in a vessel. 
    • Reduce the flame and cook for 8 to 10 minutes while stirring in between.
    • Remove about 2 tbsp of this hot milk to a small cup and soak the saffron strands in it crushing them slightly for flavor and color.
    • To the milk in vessel, add sugar while mixing well. 
    • Add cardamom powder followed by the saffron soaked milk. Cook for another two minutes and remove from flame.
    • Using a cookie cutter or any glass or cup or lid cut the bread slices into round shapes. Each slice will give you two pieces the size may vary depending on the size of the bread slice.


    • Arrange them in a bowl (serving dish, suggested). 
    • When the milk has cooled down completely add it to the bread pieces just enough to soak them.
    • Refrigerate the remaining milk and the soaked pieces for 45 mins.
    • After 45 mins, add the remaining milk to the bread pieces preserving a little to add just before serving. 
    • Garnish with pistachios.
    • Refrigerate for another 3 hrs and serve chilled. Adding the preserved milk if required.

    Bread Kaja




    Greetings!

    We are back at My Mom's Kitchen. After being on a more than a month long break I am so excited to get back to blogging filled with new zeal new ideas (& new props) am ready to take on. ☺

    As I mentioned it on our facebook page, last month was our blog's 1st Anniversary & unfortunately My Mom's Kitchen was shut but now it's time to make up the loss and with festive season always arriving soon in India, today, am sharing a simple dessert recipe made out of bread called "Bread kaja".



    This recipe is so simple & so easy to make that it's actually all a child's play! It is so easy that it was not my Mom but me making it & that too without her help (plz excuse those blacky edges for it being my first time). It is an under 15 minute recipe so you can make it whenever you crave for something sweet. This soft yet crunchy bread slices will light up your mood.

    To put it in one sentence Bread kaja is bread fried and dipped in sugar syrup and served garnished with chopped pistachios.

    Ingredients:

    1. Bread - 5 slices
    2. Sugar - 1/2 cup
    3. Water - 1/4 cup
    4. Cardamom powder - a pinch
    5. Oil - for deep frying
    6. Chopped pistachios - 1 tbsp

    Method:

    • Trim the edges of the bread and cut it diagonally to get two pieces off a slice.
    • Heat oil in a pan and deep fry till brown and crisp. Drain them on a paper towel.
    • In a saucepan take sugar water and cardamom powder.
    • Mix till the sugar dissolves completely. Let the syrup boil.
    • Remove from heat.
    • Dip the bread slices one by one in the hot syrup. Arrange them on a plate and sprinkle chopped pistachios on them while they are still sticky.
    • Serve when they have cooled down completely.
                                             

    Try this simple dessert & join in our celebration. You can also used chopped almonds and cashews for garnishing.

    Gulgule



                Gulgule are basically sweet bhajiyas made out of whole wheat flour that are fried. But to me they evoke many beautiful memories of my childhood when they were made abundantly and frequently for my sister during Ramadan every year before she moved to Australia. So with a little nostalgia and a little enthusiasm today I share with you this special recipe for Gulgule.



    Ingredients:

    1. Whole wheat flour - 2 cups
    2. Granulated sugar - 1/2 cup
    3. Cardamom powder - 2 tsp
    4. Baking soda - 1/2 tsp
    5. Water - as required
    6. Oil - to fry

    Method:

    • In a bowl take flour add sugar, cardamom powder and baking soda.
    • Adjust the amount of sugar as per your liking.
    • Knead a dough using very little water. 


    • Divide the dough into small round equal portions.
                                                        

    • Heat oil in a pan and fry them in batches.
    • Serve.

    Aloo ka Meetha





                                      I love potatoes! Sometimes I worry that I may myself turn into a potato if I indulge too much in them but then they are so amazing, tasty and versatile. They can be well incorporated into any dish you make and today the recipe that I am going to share with you is Aloo ka Meetha or potato sweet dish.

                       The recipe for Aloo ka Meetha is very simple and can be prepared in very less time. Kids and adults all are bound to enjoy this.

    Ingredients:

    1. Potatoes - 1/2kg
    2. Cashews - 15 - 20 more or less as you like
    3. Almonds - 15 - 20 
    4. Sugar - 1 1/2cup
    5. Cardamom powder - 1tsp
    6. Ghee - 2tbsp
    7. Orange food color -1/2tsp
    8. Milk - 1/2 cup

    Method:

    • Boil the potatoes in a pressure cooker.
    • Peel them and grind to a very fine paste. While grinding add a few drops of oil to your grinding jar as the potato paste will be very sticky and hard to remove, the oil will help in easy removing of contents.


                                                          

    • Soak the cashews and almonds in water or if you are on short of time you can even boil them. 
    • Peel the almonds and cut both almonds and cashews into very fine strips.
    • Heat ghee in a vessel and fry the cashews and almonds till light golden. Remove and keep aside.
      
    •  To the same ghee add potato paste. Cook on low flame stirring continously for 15mins.
    • Next add the sugar, Cardamom powder. Mix well.
    • Take milk in  a cup and add the orange food color to it. Mix well.
    • Add the milk to the potatoes.Give it a quick stir and let it cook till the mixture dries up roughly for five minutes.
    • Garnish with cashews and almonds.
    • Serve.
