Noodles salad




                  When it comes to salads, the more the variety the more you enjoy it. Today's post is something like that. Shallow fried noodles are paired with veggies to give a bowl of appetizing noodles salad.



                  While I have shallow fried the noodles you can deep fry it as well if you wish to, to make it more crispy like the one you get in american chopsuey. You can add vegetables of your choice I, for myself have included coloured peppers, spring onions, carrots and cabbage. Also, to make it more filling and to give the extra crunch I have also included peanuts here. Well, basically the more the merrier ☺

                    Like my previous post Sweet n sour carrot salad this salad recipe also has a sweet n sour dressing. Here comes the detailed recipe :-

Ingredients:

  1. Hakka Noodles - 1/2 packet
  2. Cabbage - 1 cup
  3. Carrot - 1 large
  4. Red bell pepper - 1 no
  5. Green bell pepper - 1 no
  6. Spring onions - few
  7. Peanuts - 2 tbsp
  8. Oil - for frying

for dressing:

  1. Red chilli powder - 1 tsp
  2. Vinegar - 1 tbsp
  3. Honey - 1 tbsp
  4. Lemon juice - 1 tbsp
  5. Salt - to taste 
  6. Olive oil - 1 tbsp

Method:

  • Soak the noodles in hot water for around 10 minutes. Remove and dry completely, then shallow fry in a pan.
  • To the same oil (add more if needed) shallow fry the veggies. Add these to the noodles.
  • Dry roast the peanuts, crush or halve them and add to the noodles bowl.
  • In another bowl take together all the ingredients listed under 'for dressing'. Mix well.
  • Add the prepared dressing to the bowl of noodles. Toss well.
  • Serve

Fruit Chaat



                       As it is Ramadan let me introduce to you today to a dish without which our Ramadan is incomplete and that is Fruit Chaat.

                      We first tasted fruit chaat back in the 90's when we first visited Saudi during Ramadan and one of our relative residing their had prepared this for us. The taste had struck us in such a manner that there has been no looking away, every year during Ramadan this lip smacking dish adores our table through out the month-every single day. Infact we avoid Iftar parties because all we want to have is Fruit chaat.



                      Fruits are naturally low in Sodium and fat content while being loaded with essential nutrients like potassium, Vitamin C, folate and dietary fiber and are a great option to break your fast with specially when you want to avoid oily food. But, fasting or not fasting do try this recipe atleast once, you can include or exclude fruits as per your liking. Also try other recipes which include fruits like Fruit custardMango sponge cakeMango milkshake, Strawberry milkshake and Orange kheer.          

                     Many people complicate the fruit chaat recipe adding salt and making it a little bit tangy but ours is simple and sweet as we add only sugar and yeah since it is chaat a little of chaat masala. So, here is the detailed recipe for you.

Ingredients:

  1. Apple - 1 no
  2. Banana - 1 no
  3. Grapes - 10 to 15 nos
  4. Sweet lime - 1 no
  5. Orange - 1 no
  6. Pomegranate - 1/4 cup
  7. Sugar - 2 to 3 tbsp
  8. Chaat masala - 1 tsp

Method:

  • Chop the fruits finely. 
  • Wash pomegranate seeds and grapes. De-seed the grapes if needed.
  • Take all the ingredients together in a bowl and mix well. Adjust the sugar amount as mostly all fruits are sweet and you may require only 2 tbsp of it. 
  • Serve immediately.

                       Remember to add sugar when you are ready to serve as the fruits will ooze out water, even that tastes good though!

Thai green mango salad




                           Thai green mango salad, this was a post from Sangita of Bliss of Cooking that I came across about two weeks ago in a cooking group on Facebook. Her picture made me drool & I instantly commented "tempted to try". Well, that was an honest comment. Thai food always intrigued me but an excuse was always up my sleeve either regarding the ingredients or a doubt if that will suit my palate but, nothing of that sort this time & I'm delighted because Thai green mango salad or Som Tum Mamuang (God knows how it is pronounced) was worth the try and we all loved it at my home infact we fell short of it. You too go ahead and give it a try.



                          I made three minor changes to the original recipe. Firstly I used store brought red chilli flakes, secondly did not use mortar and pestle as she had suggested and finally I did not have Peanut oil or Sesame oil so instead I went ahead with Olive oil. True to what it read this salad has an interesting fusion of taste it is salty, spicy, tangy and sweet all at the same time and those peanuts are sure to elevate your mood.

Ingredients:

  1. Raw mango - 1 cup
  2. Cucumber - 1/2 cup
  3. Green bell pepper - 1/2 cup
  4. Red bell pepper - 1/2 cup
  5. Onion - 1/2 cup
  6. Coriander leaves - few
  7. Peanuts - 2 tbsp
  8. Spring onions - few

For dressing:

  1. Spring onions - few
  2. Sugar - 1 tsp
  3. Red chilli flakes - 1 tsp
  4. Garlic cloves - 2 nos
  5. Soya sauce - 1 tsp
  6. Lemon juice - 1 tsp
  7. Salt - to taste
  8. Olive oil - 1 tbsp

Method:

  • In a small mixing bowl take finely minced garlic, red chilli flakes, sugar and lemon juice.
  • Add chopped spring onions, soya sauce and olive oil. Season it with salt. Cover and keep aside for 15 minutes.
  • Meanwhile slice the veggies.
  • Dry roast the peanuts. Remove the skin and crush them into halves.
  • Take all the ingredients in a large bowl keeping aside a few peanuts and coriander leaves for garnishing.
  • Slowly pour the dressing over the chopped veggies and give it a good mix.
  • Garnish with peanuts and coriander leaves and serve.
                                       

                    So, the bottom line for today's post is that I have experienced bliss of cooking today in My Mom's Kitchen. ☺💓                  

                   And while it's still the season of raw mangoes or kairi as we call it do try the recipes using them, the summer special of our home Kairi ki chutney and a healthy refreshing drink and my favorite Abshola .

Brown Chana salad



                  Continuing on the health spree, this is my third post in sequence using carrots. Well, I love salads personally and I am trying my hand on different things to satisfy both, my blog and my cravings. So, today I have a post on Brown chana salad. Brown chana also known as kala chana in Hindi or to put it simply, brown chickpeas are a power house of protein, high in fiber and contains several other vital vitamins and minerals making it indeed a healthy option. Also try Masala chana chaat another way for using brown chickpeas in an appetizing manner.




                   This salad is such a good one that I can go on having bowls and bowls of it one after the other. To suit my taste I have tossed in carrots, cucumber, spring onions and some red bell pepper; you can include or exclude veggies as per your liking.

                   This salad is a simple salad with a simple dressing if you are looking for a dramatic salad with a dramatic dressing then do try Sweet and sour carrot salad and if you are looking for an absolutely fuss free one then check out the Fresh green salad and if like today's recipe you wanna pair veggies with a yummilicious protein source then go ahead for the Lobia salad  from My Mom's Kicthen. Now towards today's recipe :-

Ingredients:

  1. Brown chana/chickpeas - 1 cup
  2. Cucumber - 1 no
  3. Carrot - 1 no
  4. Spring onions - few
  5. Red bell pepper - 1/2 no
  6. Coriander leaves - few
  7. Lemon - 1 tbsp
  8. Salt - to taste
  9. Black pepper - 1 tsp
  10. Cumin powder - a pinch

Method:

  • Soak the chana in water overnight or for a few hours and pressure cook them with a little salt.
  • In a mixing bowl take the boiled chana along with the chopped veggies and add all the rest of the ingredients. Toss it well.
  • Serve immediately.

Sweet n sour carrot salad



                 Salads are essential for a healthy and balanced diet & when we think of salads many people imagine raw vegetables in their plate which are too bland to swallow down the throat but, salads can also be made appetizing by including ingredients that will spark up your taste buds leaving them wanting for more. This sweet n sour carrot salad is one of them & is super easy to make.




                  In this recipe I've paired carrots with red bell pepper and diced onion. I also added a few fried cashew nuts which I had in my pantry you can use the raw ones or also replace them with roasted peanuts. The sweet n sour dressing is what adds up to the taste of the dish.

Ingredients:

  1. Carrot - 2 nos
  2. Red Bell pepper - 1 no
  3. Onion - 1 no
  4. Garlic - 2 cloves
  5. Sesame seeds - 1 tbsp
  6. Coriander leaves - few
  7. Fried cashews - few

for the dressing:

  1. Olive oil - 1 & 1/2 tbsp
  2. Lemon juice - 1 tbsp
  3. Honey - 1 tsp
  4. Soy sauce - 1/2 tsp
  5. Salt - to taste

Method:

  • In a small bowl mix together all the ingredients for the dressing.
  • In another larger bowl take grated carrots, finely chopped red bell pepper, onion and garlic.
  • Add cashews (you can also crush them or break into small pieces) followed by coriander leaves and roasted sesame seeds.
  • Pour the dressing over veggies and give it a quick toss.
  • Garnish with some more sesame seeds if desired and serve immediately.

Lobia Salad



                    Lobia or Black eyed beans combined with veggies makes a delightful salad that is both tasty and healthy and it is quite filling too.

                                     

                     Summer is at its peak and eating heavy meals is what I detest so every now and then I turn towards salads to fill my tummy the colorful appearance excites me and want me to have more. We definitely eat with our eyes first!


                   Salads also form an interesting way for me to consume my favorite capsicum. For more capsicum recipes check out Fresh Green SaladOnion capsicum masalaCarrot capsicum rice. Tomatoes and onions are also not to be forgotten so basically these are the veggies that I have used here to prepare this salad you can include or exclude veggies as per your taste.

Ingredients:

  1. Black eyed beans/ Lobia - 1 cup
  2. Capsicum - 1 no
  3. Cucumber - 1 no
  4. Tomato - 1 no
  5. Onion - 1 no
  6. Coriander leaves - few
  7. Sugar - 1/2 tsp
  8. Salt - to taste
  9. Lemon juice - 1 tsp
  10. Olive oil - 1tsp

Method:

  • Pressure cook the Lobia with just enough water for 2 to 3 whistles (the short cut method) or soak the beans for a couple of hours and boil in a vessel till cooked.
  • In a mixing bowl take the chopped vegetables add the rest of the ingredients including the cooked beans. Mix well until combined.
  • Serve.

Fresh Green Salad



                                Fresh green salad that is fresh literally in all senses. A three ingredient dish that is all fuss free. This recipe (if it is to be called a recipe) is my aunt's. She made it while she stayed at my place and given how much I love capsicum this became my favorite.

                                It is one of those salad dishes which you can make up at last moment and when served at table the color quotient gives you brownie points!  All you need for the salad is capsicum or green bell pepper, spring onions and cabbage.



                                I have already discussed the health benefits of capsicum in Carrot capsicum rice and now speaking of cabbage and spring onions they both are an excellent source of Vitamin K and Vitamin C.Cabbage is also a very good source of potassium, manganese, dietary fiber, vitamin B1, folate and copper. The sulphur compounds in spring onion help in reducing risk of coronary heart diseases and colon cancer and also lowers blood sugar levels.

Ingredients:

  1. Green cabbage - 1 cup
  2. Spring onions - 1/2 cup
  3. Capsicum - 1 no.

Method:

  • Shred the cabbage and rinse it very well. Drain the water.
  • Chop the bulbs of the spring onion finely and cut the greens lengthwise.
  • Slice the capsicum lengthwise.
  • Toss all of them together in a bowl and serve!
